How to Make Coffee Whipped Cream: 3 Ways (Instant, Infused, Stabilized)
Share
A spoonful of coffee whipped cream on a slice of pumpkin pie or a hot mocha is one of the easiest upgrades in the dessert world. If you are wondering how to make coffee whipped cream, the quickest way is to whip cold heavy cream with a little sugar and instant espresso powder. For a cleaner, more aromatic flavor, steep whole coffee beans in the cream overnight first. And if you need it to hold its shape for piping, add mascarpone.
This is not dalgona coffee, the whipped instant coffee and sugar foam; here, cream is the base and coffee is the flavor. Below are all three methods, with US and metric measures, troubleshooting and a dairy-free version.

The basics: cream, sugar, coffee
Cream. Fat is what traps air. In the US, heavy cream must contain at least 36% milkfat and light whipping cream 30–36%, under FDA standards of identity. Heavy cream whips firmer and holds longer. In Europe, look for whipping cream or double cream with at least 30% fat.
Sugar. Powdered (confectioners’) sugar dissolves instantly, and the cornstarch in most brands adds a little stability. Superfine sugar, maple syrup or honey also work.
Coffee. Liquid coffee thins the cream, so use a concentrated form:
| Coffee form | Flavor | Best for |
|---|---|---|
| Instant espresso powder or fine instant coffee | Bold, roasty, slightly bitter | Fast topping, mocha desserts |
| Whole beans steeped in cream | Aromatic, sweet, no bitterness | Plated desserts, pavlova, pies |
| Cold brew concentrate (1–2 tbsp) | Smooth, mild | Iced drinks; cream will be softer |
| Espresso shot, cooled | Strong but thins the cream | Only if mixed with mascarpone |
How to make coffee whipped cream: 3 methods
Method 1: Quick instant coffee whipped cream (5 minutes)
Makes about 2 cups (480 ml), enough for 8 servings.
- 1 cup (240 ml) cold heavy cream
- 2–3 tbsp (16–24 g) powdered sugar
- 1 1/2–2 tsp instant espresso powder or finely ground instant coffee
- 1/2 tsp vanilla extract (optional)
- Pinch of salt
- Chill the bowl and beaters for 10 minutes.
- Stir the coffee powder into the sugar so it disperses without lumps. If your instant coffee is coarse, dissolve it in 1 teaspoon of hot water and let it cool completely.
- Pour in the cream, add the sugar mix, vanilla and salt.
- Whip on medium-high until soft peaks form, about 2 to 3 minutes with an electric mixer. Stop at soft peaks for spooning, medium-firm for piping.
- Taste and adjust sugar or coffee, then whip a few seconds more.
Method 2: Bean-infused coffee whipped cream (overnight)
This method takes longer but rewards you: the cream absorbs coffee aroma without the harshness of powder.
- 1 1/4 cups (300 ml) heavy cream
- 1/3 cup (about 25–30 g) whole coffee beans
- 2–3 tbsp (16–24 g) powdered sugar
- Lightly crack the beans with a rolling pin. Do not grind them; powder makes the cream gritty and muddy.
- Combine beans and cream in a jar, cover and refrigerate for 12 to 24 hours.
- Strain through a fine sieve, pressing gently. You will lose a few tablespoons to the beans, leaving about 1 cup (240 ml).
- Whip with the sugar as in Method 1.
Medium roasts give a nutty, caramel infusion; dark roasts give a stronger, more classic coffee flavor. Flavored beans work too: vanilla- or hazelnut-flavored coffee makes a fragrant cream with no extra syrup.
Method 3: Stabilized coffee whipped cream for piping
Whipped cream weeps after a few hours. Mascarpone keeps it firm for a day in the fridge, ideal for layer cakes and make-ahead desserts.
- 1 cup (240 ml) cold heavy cream
- 1/2 cup (115 g) cold mascarpone
- 1/4 cup (30 g) powdered sugar
- 2 tsp instant espresso powder, or 1 cooled espresso shot
- Beat the mascarpone, sugar and coffee until smooth.
- Add the cream and whip to medium-firm peaks. Because mascarpone is rich, this happens fast; watch closely.
- Pipe right away or refrigerate, covered, for up to 24 hours.
Troubleshooting
| Problem | Cause | Fix |
|---|---|---|
| Will not whip | Cream too warm or too low in fat | Chill everything; use heavy cream |
| Grainy or buttery | Over-whipped | Fold in 2–3 tbsp of fresh liquid cream by hand |
| Brown speckles | Coarse instant coffee | Dissolve it in a teaspoon of hot water first |
| Bitter | Too much powder | Add sugar and a little plain cream; use infusion next time |
| Weeps after an hour | Unstabilized | Use Method 3 or whip just before serving |
Dairy-free coffee whipped cream
Refrigerate a can of full-fat coconut milk or coconut cream overnight. Scoop off only the solid top layer, about 1 cup (240 ml), and whip it with 2 tablespoons of powdered sugar and 1 1/2 teaspoons of instant espresso powder. Coconut flavor stays in the background with dark roast coffee. Store-bought plant-based whipping creams also work; follow the label for whipping times.
What to serve it with
- Pumpkin, pecan or chocolate pie
- Hot mochas and iced coffees. Our Mexican mocha recipe is a natural match
- Coffee mug cake or brownies
- Fresh berries, poached pears or grilled peaches
- Between layers of a chocolate sponge
Want the frothy cold topping from coffee shops instead? That is a different technique, covered in our sweet cream cold foam guide.
Which coffee to use
For Method 1, our Instant Coffee works well; grind it finer in a mortar for the smoothest result. For the overnight infusion, a dark, chocolatey bean such as French Roast gives a classic coffee flavor, while French Vanilla flavored coffee turns the cream into a vanilla-coffee chantilly, perfect on holiday pies.
Coffee whipped cream FAQ
Can I use brewed coffee to make whipped cream?
Only a little. More than a tablespoon or two of liquid makes the cream soft and slow to whip. Use instant powder or the infusion method instead.
How long does coffee whipped cream last?
Plain whipped cream is best within a few hours. The mascarpone version holds about 24 hours in the fridge, covered.
Can I make coffee whipped cream with a jar?
Yes. Fill a cold jar no more than a third full, close tightly and shake hard for 3 to 5 minutes.
Does coffee whipped cream have caffeine?
A little. Two teaspoons of instant coffee spread over eight servings adds only a small amount per spoonful. Use decaf instant for children’s desserts.
