Coffee Mug Cake: A 2-Minute Microwave Recipe

A coffee mug cake is a single-serving cake you mix right in a mug and cook in the microwave in about 60 to 90 seconds. Stir together flour, sugar, baking powder, butter, milk and a splash of strong coffee, microwave until the top is just set, and you have a warm, tender cake with real coffee flavor in under five minutes.

It is the dessert for nights when you want something sweet but not a whole pan of leftovers. Below you will find the base recipe, a cook-time table by microwave wattage, and five variations, from mocha to a mini coffee cake with crumb topping.

Why a Coffee Mug Cake Works

A microwave heats the water in the batter fast, and that steam plus the baking powder lifts the cake in seconds. Because there is no oven crust, the cake stays soft and almost pudding-like in the center. The trick is to stop cooking early: a mug cake goes from fluffy to rubbery in about 15 seconds.

Coffee does two jobs here. It replaces some of the liquid, so you get flavor without making the batter heavier, and its roasted bitterness balances the sugar. A bold, dark coffee gives the most noticeable taste. If you only have a mild brew, add a little instant coffee to the dry ingredients to push the flavor forward.

Coffee Mug Cake Recipe (1 Serving)

Use a microwave-safe mug that holds at least 12 oz (350 ml). The batter rises well above its starting level, and a small mug will overflow.

Ingredients

  • 1/4 cup (30 g) all-purpose flour
  • 2 tbsp (25 g) granulated sugar
  • 1 tbsp (12 g) packed brown sugar
  • 1/4 tsp baking powder
  • 1 small pinch of salt
  • 1/2 tsp instant coffee (optional, for a stronger coffee taste)
  • 2 tbsp (30 ml) strong brewed coffee or 1 shot of espresso, cooled slightly
  • 1 tbsp (15 ml) milk
  • 2 tbsp (28 g) unsalted butter, melted, or 2 tbsp (30 ml) neutral oil
  • 1/4 tsp vanilla extract

Steps

  1. Melt the butter in the mug in the microwave, about 20 to 30 seconds. Let it cool for a minute so it does not scramble anything.
  2. Add the coffee, milk and vanilla to the mug and stir.
  3. Add the flour, both sugars, baking powder, salt and instant coffee (if using). Stir with a fork for about 20 seconds, scraping the bottom edges, until no dry flour remains. A few small lumps are fine.
  4. Microwave on high for 60 seconds, then check. The top should look dry and spring back lightly when touched. If it is still glossy and wet, cook in 10-second bursts.
  5. Let the cake rest for 1 minute. It keeps cooking from residual heat and becomes easier to eat.

Microwave Times by Wattage

Microwaves vary a lot, so use this table as a starting point and check early the first time.

Microwave power First check Typical total time
700 W 80 seconds 90 to 110 seconds
900 W 65 seconds 75 to 90 seconds
1,000 W 60 seconds 60 to 80 seconds
1,200 W 50 seconds 55 to 70 seconds

You can usually find the wattage on a sticker inside the door or on the back of the unit.

Coffee Mug Cake Variations

Mocha mug cake

Swap 1 tbsp (8 g) of the flour for unsweetened cocoa powder and stir in 1 tbsp of chocolate chips. Push a few more chips into the top before cooking so they melt into little pools. For a mocha you can sip alongside, see our café mocha recipe.

Mini coffee cake with crumb topping

Mix 1 tbsp flour, 1 tbsp brown sugar, 1/4 tsp cinnamon and 2 tsp soft butter with your fingers until crumbly. Sprinkle it over the batter before microwaving. It will not crisp like an oven streusel, but it gives that classic cinnamon swirl taste. Curious why coffee cake rarely contains coffee? We cover it in why is it called coffee cake.

Caramel latte mug cake

Replace the milk with 1 tbsp of caramel sauce thinned with a teaspoon of milk, then drizzle more caramel on top after cooking. A pinch of flaky salt finishes it.

Vanilla cream mug cake

Increase the vanilla to 1/2 tsp and top the warm cake with a spoonful of whipped cream or vanilla ice cream. The cold cream against the hot cake is the whole point.

Dairy-free version

Use oil instead of butter and oat or almond milk instead of dairy. Oat milk gives the closest texture to the original.

Tips for a Fluffy, Not Rubbery, Mug Cake

  • Measure carefully. With tiny quantities, an extra spoonful of flour changes everything. Spoon flour into the measuring cup and level it.
  • Do not overmix. Stir just until combined. Overworking develops gluten and makes the cake chewy.
  • Undercook slightly. Pull it when the top is just set. A slightly moist center is better than a dry sponge.
  • Skip the egg. A whole egg is too much for a single serving and gives a spongy, eggy texture. This recipe is egg-free on purpose.
  • Use fresh baking powder. If your tin has been open for over a year, your cake may not rise.
  • Eat it warm. Mug cakes firm up as they cool, so enjoy yours within 10 minutes.

Coffee Mug Cake FAQ

Can I make a coffee mug cake with instant coffee?

Yes. Dissolve 1 tsp of instant coffee in 2 tbsp of hot water and use it in place of brewed coffee. Instant coffee is actually one of the easiest ways to get a strong, consistent coffee flavor in baking.

Why did my mug cake turn out rubbery?

It was almost certainly overcooked or overmixed. Reduce the time by 10 to 15 seconds next time and stir only until the flour disappears.

Can I make a mug cake without a microwave?

You can bake the same batter in an oven-safe ramekin at 350°F (175°C) for about 12 to 15 minutes, until a toothpick comes out with a few moist crumbs. It will have a firmer, more cake-like texture.

Does a coffee mug cake have a lot of caffeine?

Not much. Two tablespoons of brewed coffee contain only a small fraction of a full cup's caffeine. If you are sensitive or baking for kids, use decaf coffee and the cake will taste the same.
