Sweet Cream Cold Foam: How to Make It at Home
Share
Sweet cream cold foam is a thick, pourable topping made by frothing cold heavy cream, 2% milk and vanilla syrup until it doubles in volume. For one drink, froth 3 tablespoons of heavy cream, 2 tablespoons of milk and 1 tablespoon of vanilla syrup for 20–30 seconds with a handheld frother, or shake it in a jar for about a minute. Spoon it over cold brew or iced coffee and it floats on top, slowly cascading into the drink.
What Is Sweet Cream Cold Foam?
It is a lightly whipped vanilla cream that sits between whipped cream and frothed milk. Whipped cream is stiff and spoonable. Frothed milk is airy but thin. Sweet cream cold foam is velvety and pourable, thick enough to float on iced coffee, yet loose enough to mix in as you sip.
It became a café favorite on top of cold brew because it adds sweetness and body without diluting the coffee. If you have not made cold brew yet, start with our guide on how to make cold brew coffee at home.
Sweet Cream Cold Foam Ingredients
For one 16 oz drink:
- Heavy cream: 3 tablespoons (45 ml), very cold.
- 2% milk: 2 tablespoons (30 ml), very cold.
- Vanilla syrup: 1 tablespoon (15 ml). To make your own, simmer 1/2 cup (100 g) sugar with 1/2 cup (120 ml) water until dissolved, cool, then add 1 teaspoon vanilla extract.
The cream gives richness and structure, the milk keeps it pourable, and the syrup sweetens it. Everything should come straight from the fridge: cold fat foams more easily and holds bubbles longer.
How to Make It With a Handheld Frother
- Add the cream, milk and vanilla syrup to a tall glass or measuring cup. A narrow container keeps the splashes in.
- Insert the frother just below the surface and turn it on.
- Move it slowly up and down for 20–30 seconds, until the foam roughly doubles and looks like melted ice cream.
- Stop before it forms stiff peaks. If it holds its shape like whipped cream, it went too far.
- Pour or spoon it immediately over your iced coffee.
The Jar Method (No Frother Needed)
- Pour the cream, milk and syrup into a small mason jar, filling it no more than one-third full so there is room for air.
- Seal the lid tightly.
- Shake hard for 45–60 seconds, until the liquid thickens and you can no longer hear it sloshing much.
- Open, check the texture and shake a few more seconds if needed.
Other options: a French press (pump the plunger 20–30 times), a blender on low for 10 seconds, or an electric milk frother on its cold setting.
Method Comparison
| Method | Time | Texture | Best for |
|---|---|---|---|
| Handheld frother | 20–30 seconds | Silky, very even | Single drinks, most control |
| Mason jar | 45–60 seconds | Slightly looser | No equipment needed |
| French press | About 30 seconds | Fine and dense | Two or three drinks at once |
| Electric frother (cold setting) | About 1–2 minutes | Thick, consistent | Hands-free daily routine |
How to Serve It
Fill a glass with ice and cold brew, leaving about an inch at the top. Pour the foam slowly over the back of a spoon so it settles in a thick layer. Serve without a straw, or with a straw pushed to the bottom, so you get both foam and coffee in each sip.
It also tops iced lattes, iced americanos, iced matcha and even iced chai. Our iced latte guide and Flavored Iced Coffee: 5 Easy Recipes are great places to put your foam to work.
Flavor Variations
Keep the same base of 3 tablespoons cream and 2 tablespoons milk, and swap the vanilla syrup:
- Salted caramel: 1 tablespoon caramel sauce plus a pinch of salt.
- Brown sugar cinnamon: 1 tablespoon brown sugar syrup and a pinch of cinnamon.
- Chocolate: 1 tablespoon chocolate syrup or 1 teaspoon cocoa powder with 2 teaspoons sugar.
- Pumpkin cream: 1 tablespoon pumpkin puree, 1 tablespoon syrup and a pinch of pumpkin pie spice.
- Maple: 1 tablespoon pure maple syrup.
- Matcha: 1/2 teaspoon matcha powder plus 1 tablespoon vanilla syrup.
- Dairy-free: Use full-fat canned coconut cream with a splash of barista oat milk. It will be a little less stable, so serve it right away.
Troubleshooting Tips
- Foam will not thicken: Your ingredients may be too warm, or there is not enough fat. Chill everything and use real heavy cream.
- Foam is stiff and lumpy: You overwhipped it. Stir in a splash of milk to loosen it.
- Foam sinks right away: It was too thin, or the coffee was not cold. Froth a few seconds longer and use plenty of ice.
- Making a batch: Mix the unfrothed sweet cream (cream, milk, syrup) and keep it in the fridge for up to 3 days. Froth each serving fresh.
Sweet Cream Cold Foam FAQ
What is the difference between sweet cream and cold foam?
Vanilla sweet cream is the liquid mix of cream, milk and vanilla syrup, often poured straight into iced coffee. Cold foam is milk or cream frothed cold into a foam. Sweet cream cold foam is simply that sweet cream mixture frothed into a thick topping.
Can I make cold foam with just milk?
Yes, but it will be lighter and will disappear faster. Skim milk actually foams well cold, but the bubbles are big and airy. For the rich, velvety texture, you need some heavy cream.
Can I use half-and-half instead?
Half-and-half works on its own in place of the cream and milk. Use 5 tablespoons (75 ml) with 1 tablespoon syrup. It is slightly less thick but still floats nicely.
How long does cold foam last?
Frothed foam is best within a few minutes. It slowly melts into the drink, which is part of the appeal. Store only the unfrothed mixture.
