S'mores Latte Recipe: Campfire Flavor in a Mug

A s'mores latte captures the best part of a campfire night: bittersweet chocolate, gooey toasted marshmallow and a crunchy graham cracker edge, all wrapped around a shot of espresso. To make one at home, stir chocolate sauce into hot espresso, add a spoonful of toasted marshmallow syrup, top with steamed milk and finish with a torched marshmallow and graham crumbs on the rim.

It takes about ten minutes, and you do not need a fire pit. Below is the full recipe, a quick toasted marshmallow syrup, and three ways to adapt it.

A quick s'mores backstory

S'mores are tied closely to American scouting. A recipe called “Some More” appeared in the Girl Scouts handbook Tramping and Trailing with the Girl Scouts in 1927, and it is often attributed to troop leader Loretta Scott Crew. A 1925 newspaper report from a Girl Scout camp suggests troops were already making them earlier. The shortened name “s'more” turned up in print in a 1938 camp recreation book.

The graham cracker is older still. It traces back to the 19th-century reformer Sylvester Graham, though the sweet version we know came later, and the National Biscuit Company began mass-producing graham crackers in 1898. Put the three components in a mug with espresso and you have the s'mores latte.

S'mores latte recipe

Serves: 1 (about 10 oz / 300 ml) · Time: 10 minutes

Ingredients

Ingredient US Metric
Espresso (or very strong coffee) 2 shots (2 fl oz) or 1/2 cup strong coffee 60 ml or 120 ml
Chocolate sauce or melted milk chocolate 1 tbsp 15 ml
Toasted marshmallow syrup (below) 1–2 tbsp 15–30 ml
Milk 3/4 cup 180 ml
Graham crackers, finely crushed 1 sheet about 15 g
Honey or chocolate sauce for the rim 1 tsp 5 ml
Large marshmallows for topping 2 2

Quick toasted marshmallow syrup (makes about 3/4 cup / 180 ml)

  1. Spread 1 cup (about 50 g) mini marshmallows on a lined baking tray and broil for 1–2 minutes, watching closely, until deep golden.
  2. In a small pan, warm 1/2 cup (120 ml) water with 1/2 cup (100 g) sugar until the sugar dissolves.
  3. Scrape in the toasted marshmallows and whisk over low heat until melted and smooth. Add a pinch of salt and a drop of vanilla.
  4. Cool, pour into a clean jar and refrigerate. Use within about a week; it thickens when cold, so warm it slightly before using.

Steps

  1. Rim the mug. Brush honey or chocolate sauce around the rim and dip it into the graham crumbs.
  2. Brew the coffee. Pull two shots of espresso directly into the mug, or pour in 1/2 cup of strong moka pot or French press coffee.
  3. Flavor it. Stir in the chocolate sauce and marshmallow syrup while the coffee is hot, so everything melts together.
  4. Steam the milk. Heat the milk to about 140–150°F (60–65°C) and froth it. Pour it into the mug, then spoon the foam on top.
  5. Toast the top. Set the marshmallows on the foam and toast them with a kitchen torch, or toast them on a skewer over a gas flame before adding. Finish with a sprinkle of graham crumbs.

Tips for the best s'mores latte

  • Balance the sweetness. Chocolate sauce, syrup and marshmallows add up fast. Start with 1 tbsp syrup, taste, then add more.
  • Pick a chocolatey coffee. A medium-dark roast with cocoa notes holds its own against the sugar; very bright, fruity coffees can clash.
  • Toast for flavor, not just looks. The caramelized surface of a toasted marshmallow is what gives the drink its campfire taste.
  • Make whipped cream instead of foam for a dessert-style mug. Our coffee whipped cream works well on top.

Iced s'mores latte

Stir the chocolate sauce and marshmallow syrup into hot espresso until dissolved, then let it cool for a minute. Fill a rimmed glass with ice, pour in 3/4 cup (180 ml) cold milk and add the espresso mixture. Top with a little cold foam or whipped cream and graham crumbs. Skip the torched marshmallow here, as it will not stay crisp on a cold drink. If you prefer a smoother base, use cold brew concentrate in place of espresso.

Variations: dairy-free, lighter and kid-friendly

Dairy-free s'mores latte

Use oat or soy milk for the best foam and a dairy-free dark chocolate sauce. Note that most marshmallows contain gelatin; look for vegan marshmallows if you avoid animal products.

Lighter s'mores latte

Brew a s'mores flavored coffee instead of plain espresso, skip the syrup and marshmallows, and add just 1 tsp of cocoa powder whisked into the milk. Our S'mores coffee has toasted marshmallow, graham cracker and milk chocolate notes from natural flavorings with no sugar or calories added, so most of the campfire flavor is already in the cup.

Kid-friendly s'mores steamer

Leave out the coffee entirely. Warm the milk with the chocolate and a little marshmallow syrup and top with toasted marshmallows. It is the same treat without the caffeine.

Best coffee for a s'mores latte

The simplest route is to start with coffee that already tastes like dessert. Brew S'mores as espresso or strong moka pot coffee and the flavors stack nicely with the real chocolate and marshmallow. For a richer chocolate note, Mocha is a medium roast Arabica infused with chocolate flavor, again without sugar or syrup. For the iced version, our Cold Brew Coffee is a coarse-ground dark French roast blend made for smooth, low-acid concentrate. Every bag is roasted 1–5 days before delivery. S'mores latte FAQ

What is in a s'mores latte?

Espresso, steamed milk, chocolate, marshmallow flavor (syrup or real marshmallows) and graham cracker, usually as a crumb rim or topping.

Can I make a s'mores latte without an espresso machine?

Yes. Use 1/2 cup of strong coffee from a moka pot, AeroPress or French press. See our guide to espresso without a machine.

Can I use marshmallow creme instead of syrup?

Yes. Stir 1–2 tbsp of marshmallow creme into the hot espresso until it melts. It gives a sweeter, untoasted flavor, so torch the topping for that campfire note.

How do I toast marshmallows without a torch?

Put them on a lined tray under the broiler for 30–60 seconds, or hold one on a metal skewer over a gas flame. Watch closely, as they burn quickly.

Is a s'mores latte the same as a mocha?

It starts like a mocha, but the toasted marshmallow and graham cracker change the flavor completely. Read our guide on how to make a mocha for the base drink.
