Mocha Mousse: Recipe and the Color of the Year

Mocha mousse is a light, airy chocolate mousse flavored with espresso, so every spoonful tastes like a café mocha turned into dessert. The easiest version needs just dark chocolate, strong coffee, cream, a little sugar and about 20 minutes of work before chilling. It also happens to share its name with Pantone's Color of the Year for 2025, a warm brown inspired by chocolate and coffee.

Here is a no-egg mocha mousse recipe with US and metric measurements, variations, serving ideas and the story of the color that put “mocha mousse” in fashion headlines.

Mocha Mousse: Pantone's Color of the Year 2025

On December 5, 2024, the Pantone Color Institute announced PANTONE 17-1230 Mocha Mousse as its Color of the Year for 2025. It is a soft, mellow brown that Pantone described in terms of chocolate, coffee and cacao, the kind of shade meant to feel comforting and quietly indulgent. It followed PANTONE 13-1023 Peach Fuzz, the 2024 pick.

The choice sent a wave of brown through fashion, interiors and packaging, and food lovers noticed the obvious: the color was named after a dessert. It felt like the perfect excuse to make the real thing. (Just to be clear, Feel Espresso has no connection with Pantone; we simply like the color and love the dessert.)

Fun kitchen fact: the lighter your mousse, the closer it gets to the Pantone shade. A classic dark chocolate mousse is much deeper brown, while a milk chocolate version with extra cream lands right in that soft mocha range.

Easy Mocha Mousse Recipe (No Eggs)

This version is set by whipped cream and chocolate alone, with no raw eggs and no gelatin. Serves 4 to 6.

Ingredients

  • 6 oz (170 g) bittersweet or semisweet chocolate (60 to 70% cacao), chopped
  • 1/4 cup (60 ml) hot strong coffee or 2 shots of espresso
  • 1 tsp instant coffee or instant espresso
  • 1 1/2 cups (360 ml) cold heavy whipping cream, divided
  • 2 tbsp (25 g) granulated sugar or powdered sugar
  • 1 tsp vanilla extract
  • 1 small pinch of salt
  • Cocoa powder, chocolate shavings or coffee beans to garnish

Steps

  1. Put the chopped chocolate, instant coffee and salt in a heatproof bowl.
  2. Heat 1/4 cup (60 ml) of the cream until steaming, then pour it and the hot coffee over the chocolate. Wait 2 minutes, then stir slowly until completely smooth.
  3. Let the chocolate mixture cool to lukewarm, about 10 to 15 minutes. It should feel barely warm on your lip. If it is too hot, it will melt the whipped cream.
  4. In a chilled bowl, whip the remaining 1 1/4 cups (300 ml) cream with the sugar and vanilla to soft peaks. Stop before it gets stiff and grainy.
  5. Stir one large spoonful of whipped cream into the chocolate to loosen it.
  6. Gently fold in the rest of the whipped cream in two additions, using a spatula and turning the bowl, until no white streaks remain.
  7. Spoon into glasses or ramekins and chill for at least 2 hours, or until set.
  8. Garnish just before serving with a dusting of cocoa, chocolate shavings or a few whole coffee beans.

Mocha Mousse Variations

Milk chocolate “Pantone” mousse

Use milk chocolate instead of dark, reduce the sugar to 1 tbsp, and add an extra 1/4 cup (60 ml) of whipped cream. The result is lighter in color and flavor, and much closer to that soft Mocha Mousse brown.

Classic French-style mocha mousse

For a denser, silkier mousse, whisk 3 egg yolks into the warm chocolate and fold in 3 egg whites whipped with the sugar instead of part of the cream. Use pasteurized eggs if you are serving anyone pregnant, very young, elderly or immunocompromised.

Peppermint mocha mousse

Add 1/4 tsp peppermint extract to the chocolate and top with crushed candy canes. A natural partner for our peppermint mocha recipe during the holidays.

Spiced Mexican mocha mousse

Add 1/2 tsp cinnamon and a tiny pinch of cayenne to the chocolate. The gentle warmth lingers after each bite.

Dairy-free mocha mousse

Use dairy-free dark chocolate and replace the cream with chilled full-fat coconut cream, whipped. Expect a light coconut flavor in the background.

Tips for a Smooth, Airy Mousse

  • Use real chocolate bars, not chips. Chips contain stabilizers that keep them from melting as smoothly.
  • Brew the coffee strong. Chocolate and cream mute coffee flavor, so weak coffee simply disappears. The instant coffee adds an extra layer.
  • Watch the temperature. Warm chocolate plus cold cream equals lumps or a runny mousse. Lukewarm is the target.
  • Do not overwhip the cream. Soft peaks fold in more easily and give a silkier texture.
  • Fold, do not stir. Folding keeps the air bubbles that make mousse light.

How to Serve Mocha Mousse

Serve it in small glasses, since it is rich. A crisp cookie on the side adds contrast: our mocha chocolate chip cookies or a few amaretti both work. For coffee, pick something bold enough to stand up to chocolate, like an espresso or a café mocha. Our coffee and chocolate pairing guide has more ideas.

A Dessert Worth the Hype

Mocha mousse earned its moment on the color charts, but the dessert is the real reason to love the name. Make it with a coffee that has some backbone. At Feel Espresso, our Italian Roast brews a deep, dark espresso that cuts through chocolate, and our Mocha flavored coffee doubles the chocolate notes in every cup you serve alongside it.
