Espresso Chocolate Chip Muffins
Share
These espresso chocolate chip muffins taste like your morning latte and a bakery treat in one bite: tall, tender, flecked with chocolate and deeply coffee-flavored without any bitterness. The trick to a strong coffee taste is using concentrated coffee, either instant espresso dissolved in warm milk or a shot of real espresso, rather than weak brewed coffee that just thins the batter. A short blast of high heat gives you domed, bakery-style tops.
The recipe makes 12 standard muffins in about 35 minutes, with no mixer needed.

Espresso chocolate chip muffins recipe
Makes 12 standard muffins. Prep 15 minutes, bake about 20 minutes.
Dry ingredients
| Ingredient | US | Metric |
|---|---|---|
| All-purpose flour | 2 cups | 250 g |
| Light brown sugar, packed | 1/2 cup | 100 g |
| Granulated sugar | 1/4 cup, plus 1 tbsp for topping | 50 g, plus 12 g |
| Baking powder | 2 tsp | 8 g |
| Baking soda | 1/2 tsp | 3 g |
| Fine salt | 1/2 tsp | 3 g |
| Chocolate chips (semisweet) | 1 cup, plus 2 tbsp for topping | 170 g, plus 20 g |
Wet ingredients
| Ingredient | US | Metric |
|---|---|---|
| Instant espresso powder or instant coffee | 2 tbsp | about 8 g |
| Milk, warm | 3/4 cup | 180 ml |
| Neutral oil or melted butter | 1/2 cup | 120 ml oil or 115 g butter |
| Large eggs, room temperature | 2 | 2 |
| Plain yogurt or sour cream | 1/2 cup | 120 g |
| Vanilla extract | 1 tsp | 5 ml |
Method
- Heat the oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners or grease it well.
- Dissolve the coffee. Stir the instant espresso into the warm milk until no granules remain. Let it cool for a few minutes so it does not cook the eggs.
- Mix the dry ingredients. In a large bowl, whisk the flour, both sugars, baking powder, baking soda and salt. Stir in 1 cup (170 g) chocolate chips so they get coated in flour, which helps stop them sinking.
- Mix the wet ingredients. In a second bowl, whisk the coffee milk, oil or butter, eggs, yogurt and vanilla until smooth.
- Combine gently. Pour the wet ingredients into the dry and fold with a spatula until just combined. A few streaks of flour are fine. Stop as soon as you no longer see dry patches.
- Fill the cups. Divide the batter evenly; the cups will be full to the top. Scatter the remaining chips and the tablespoon of sugar over the tops.
- Bake hot, then lower. Bake at 425°F (220°C) for 5 minutes, then, without opening the door, lower the oven to 375°F (190°C) and bake 13 to 16 minutes more, until a toothpick in the center comes out with moist crumbs but no wet batter.
- Cool. Leave in the tin for 5 minutes, then move to a rack.
Instant espresso or a real shot?
Both work. They give slightly different results.
| Option | How to use it | Result |
|---|---|---|
| Instant espresso powder | 2 tbsp dissolved in the warm milk | Strongest, most even coffee flavor; darkest crumb |
| Instant coffee granules | 2 tbsp dissolved in the warm milk | Slightly milder, still clearly coffee |
| Fresh espresso | 2 shots (60 ml) replacing 1/4 cup (60 ml) of the milk, plus 1 tsp instant for depth | Rounder, more aromatic flavor |
| Strong brewed coffee | Replace 1/2 cup (120 ml) of the milk, plus 1 tbsp instant | Mildest; good for kids or coffee-shy eaters |

Tips for tall, moist muffins
- Do not overmix. Overworked batter develops gluten and gives tough, tunneled muffins.
- Fill the cups to the top. Generous filling plus the initial high heat makes the domed bakery look.
- Rest the batter (optional). Letting the filled tin sit for 15 to 30 minutes before baking can give an even taller rise.
- Use room-temperature eggs and yogurt. Cold dairy can make melted butter clump.
- Mix chip sizes. Mini chips spread chocolate through every bite; regular chips give pockets of melted chocolate.
- Check early. Ovens vary. Start checking 2 minutes before the end of the time range.
Troubleshooting
| Problem | Likely cause | Fix |
|---|---|---|
| Flat tops | Cups underfilled, oven too cool | Fill to the rim; use the 425°F start |
| Dry muffins | Overbaked | Pull them when crumbs still cling to the toothpick |
| Weak coffee flavor | Brewed coffee too dilute | Use instant espresso, or add 1 tsp extra |
| Chips all at the bottom | Thin batter, chips not coated | Toss chips in flour; do not add extra liquid |
| Gummy center | Underbaked or opened oven too early | Bake 2 to 3 minutes longer; keep the door closed |
Variations, dairy-free and lighter options
Variations
- Mocha muffins: replace 1/4 cup (30 g) of the flour with unsweetened cocoa powder.
- Cinnamon espresso: add 1 tsp ground cinnamon to the dry ingredients and sprinkle cinnamon sugar on top.
- White chocolate and espresso: swap the semisweet chips for white chocolate chips.
- Banana espresso: replace the yogurt with 1/2 cup (120 g) mashed ripe banana.
- Streusel top: rub together 1/3 cup (40 g) flour, 3 tbsp (40 g) brown sugar and 2 tbsp (28 g) cold butter and scatter over the batter.
Dairy-free
Use oat or soy milk, neutral oil instead of butter, a plain dairy-free yogurt and dairy-free chocolate chips. The texture stays moist and tender.
Lighter option
Cut the brown sugar to 1/3 cup (65 g), use mini chips and reduce them to 2/3 cup (115 g), and swap half the all-purpose flour for whole wheat pastry flour. The muffins will be a little less sweet and denser, with the coffee flavor even more noticeable.
For kids and late-night baking
Use decaf espresso or decaf instant coffee. You keep the flavor without the caffeine.
Storage
- Room temperature: in an airtight container lined with paper towel for up to 2 days.
- Freezer: wrap individually and freeze for up to 3 months. Thaw at room temperature or warm for 15 to 20 seconds in the microwave.
Coffee to bake with
For the easiest version, our premium instant coffee dissolves in seconds and gives a strong, even flavor. If you have an espresso machine, a shot of 6 Bean Blend adds dark chocolate depth that suits the chips. For a kid-friendly batch, use Decaf Espresso. And for a cup alongside, Mocha flavored coffee carries chocolate notes without any added sugar.
Espresso muffins FAQ
Can I use regular brewed coffee in muffins?
Yes, but the flavor is mild. Brew it double strength or add a tablespoon of instant coffee to keep the taste bold.
Do espresso muffins have caffeine?
Yes, a little, since they contain real coffee. Use decaf if you are baking for kids or eating them late in the day.
Why do my muffins sink in the middle?
Usually underbaking or opening the oven too early. Bake until a toothpick shows moist crumbs, not wet batter.
Can I make these as mini muffins?
Yes. Bake at 375°F (190°C) for 10 to 12 minutes. The recipe makes about 36 minis.
