No-Churn Coffee Ice Cream
Share
To make no-churn coffee ice cream, you only need three ingredients: heavy cream, sweetened condensed milk and instant coffee. Dissolve the coffee in the condensed milk, whip the cream to stiff peaks, fold the two together and freeze for at least 6 hours. No ice cream maker, no eggs, no stove.
The result is a scoopable, creamy coffee ice cream with a real coffee kick. Below you will find exact quantities in US and metric units, step-by-step instructions, mix-in ideas and fixes for common problems.
How No-Churn Ice Cream Works
Traditional ice cream is churned while it freezes. The churning adds air and keeps ice crystals tiny, which is what makes it smooth. No-churn ice cream gets the same result a different way:
- Whipped cream supplies the air. Beating heavy cream to stiff peaks traps tiny bubbles that give the ice cream a light, scoopable texture.
- Sweetened condensed milk controls the ice. It is very high in sugar and low in water, and sugar lowers the freezing point. Less free water and more sugar means fewer, smaller ice crystals.
- Instant coffee adds flavor without water. Brewed coffee would add liquid that freezes into icy shards. Instant coffee dissolves straight into the condensed milk and keeps the mixture rich.
3-Ingredient Coffee Ice Cream Recipe
Makes about 1 1/2 quarts (1.4 liters), enough for 8–10 scoops. Prep 10 minutes, freeze at least 6 hours.
Ingredients
- Cold heavy cream (heavy whipping cream): 2 cups (480 ml)
- Sweetened condensed milk: one 14 oz can (397 g)
- Instant coffee or instant espresso: 2–3 tbsp (about 6–10 g), depending on strength
Optional but recommended: a pinch of salt and 1 tsp (5 ml) vanilla extract, which round out the coffee flavor.
Instructions
- Chill your tools. Place a large mixing bowl and the whisk or beaters in the freezer for 10 minutes. Cold equipment helps cream whip faster and higher.
- Dissolve the coffee. In a medium bowl, stir the instant coffee into the condensed milk until no granules remain. If it resists, add 1 tsp hot water to help it dissolve, then let it cool. Stir in vanilla and salt if using.
- Whip the cream. Beat the cold cream on medium-high until it holds stiff peaks, about 3–4 minutes with an electric mixer. Stop before it turns grainy.
- Lighten the base. Stir about one large scoop of whipped cream into the coffee mixture to loosen it.
- Fold. Gently fold the coffee mixture into the remaining whipped cream with a spatula until uniform and no streaks remain. Keep as much air as possible.
- Freeze. Spread into a 9x5-inch (23x13 cm) loaf pan or freezer container. Press plastic wrap directly onto the surface, cover and freeze at least 6 hours, ideally overnight.
- Scoop. Let it sit at room temperature for 5 minutes before scooping.
Choosing Coffee for Coffee Ice Cream
Cold temperatures mute flavor, so coffee ice cream needs a bold, concentrated coffee. Here is how the options compare:
| Coffee option | Amount per recipe | Result |
|---|---|---|
| Instant coffee | 2–3 tbsp | Creamy, smooth, classic coffee shop flavor |
| Instant espresso powder | 1 1/2–2 tbsp | Darker, more intense roast notes |
| Cold brew concentrate | 1/4 cup (60 ml) max | Smooth flavor, slightly icier texture |
| Brewed coffee | Not recommended | Too much water, icy and weak |
Our Premium Instant Coffee is an easy pick because it dissolves cleanly into the condensed milk. If you would rather use real brewed coffee, make a strong concentrate following our guide on how to make cold brew at home, and stay within the amount in the table to avoid an icy texture. For a ready-made option, our Cold Brew Coffee blend is roasted specifically for that method.
Coffee Ice Cream Variations and Mix-Ins
Fold mix-ins in at the very end, just before freezing. Plan on about 1 cup (150–170 g) total.
- Mocha chip: 3/4 cup (130 g) finely chopped dark chocolate.
- Coffee cookies and cream: 10 crushed chocolate sandwich cookies.
- Caramel swirl: drizzle 1/3 cup (80 ml) thick caramel sauce between layers and swirl with a knife.
- Toasted nut: 3/4 cup (90 g) toasted chopped pecans or hazelnuts.
- Brownie chunks: 1 cup diced fudgy brownies.
- Decaf version: use decaf instant coffee for an evening dessert or for kids.
Serving ideas
Coffee ice cream is the natural base for an affogato: a scoop in a small glass, drowned in a hot shot of espresso. It also makes a great milkshake: blend 2 scoops with 1/2 cup (120 ml) milk and a shot of cooled espresso.
Tips for Creamy, Not Icy, Results
- Use full-fat heavy cream with at least 36% fat. Light cream or half-and-half will not whip properly.
- Do not overwhip. Cream that goes past stiff peaks turns grainy and buttery.
- Fold, do not stir. Aggressive mixing knocks the air out and gives you a dense, hard block.
- Cover the surface. Plastic wrap pressed onto the ice cream helps limit ice crystals and freezer odors.
- Eat it within about 2 weeks. Homemade ice cream has no stabilizers, so texture and flavor are best when fresh.
Coffee Ice Cream FAQ
Can I use brewed coffee instead of instant?
You can, but the extra water makes no-churn ice cream icier. If you do, use no more than 1/4 cup (60 ml) of very strong, cooled coffee or cold brew concentrate and expect a slightly firmer texture.
How long does no-churn coffee ice cream take to freeze?
At least 6 hours, and overnight is best for a firm, scoopable texture. Shallow containers freeze faster than deep ones.
How much caffeine is in coffee ice cream?
It depends on the coffee and amount you use. A batch with 2–3 tbsp of instant coffee spread across 8–10 scoops gives each scoop far less caffeine than a typical cup of coffee, but it is not caffeine-free. Use decaf instant if that matters to you.
Why is my no-churn ice cream hard?
Most often the cream was underwhipped or the air was knocked out while folding. Let it sit out 5–10 minutes before scooping, and next time whip to stiff peaks and fold gently.
