Coffee Granita: Sicily's Icy Coffee Dessert
Share
Coffee granita is a Sicilian frozen dessert made from sweetened strong coffee that is frozen slowly and scraped with a fork into fluffy, glittering ice crystals. You need only coffee, sugar, a metal pan and a few hours near the freezer. In Sicily it is often eaten in the morning, topped with whipped cream and served with a soft brioche bun for dipping.
Below you will find a reliable recipe, the scraping method that gives granita its texture, and how to serve it the Sicilian way at home.
What Is Coffee Granita?
Granita sits somewhere between a slushie and a sorbet. Unlike sorbet, it is not churned, so it never turns smooth and creamy. Instead, you stir and scrape it as it freezes, which breaks the ice into small, separate flakes. The result is light, crunchy at first and then melting on the tongue.
Sicily has a long history of frozen desserts. Long before freezers, snow was gathered on the island’s mountains, including Mount Etna, packed into stone pits and carried down to towns in summer to chill drinks and desserts. Today almond, lemon, pistachio and mulberry granitas are all common, but coffee granita is a classic, especially in Messina, where it is usually crowned with fresh whipped cream.
If you love the idea of coffee meeting something cold and sweet, it is a close cousin of the affogato and the shaken caffè shakerato.
Coffee Granita Recipe
This recipe makes about 4 servings. Strong coffee is essential: freezing dulls flavor, so a brew that tastes almost too intense when hot will taste just right once frozen.
Ingredients
- 2 cups (480 ml) freshly brewed strong coffee or espresso, still hot
- 1/3 cup (65 g) granulated sugar, or up to 1/2 cup (100 g) for a sweeter granita
- A small pinch of salt (optional, it rounds out bitterness)
- 1/2 teaspoon vanilla extract (optional)
For serving
- 1/2 cup (120 ml) cold heavy cream
- 1 tablespoon (12 g) sugar or powdered sugar
- 4 brioche buns, ideally slightly warm
Steps
- Brew the coffee. Espresso is traditional, but a strong moka pot, AeroPress or double-strength drip brew works well. If you need a refresher, see our guide on how to make espresso at home.
- Stir the sugar and salt into the hot coffee until fully dissolved. Add vanilla if using.
- Let the mixture cool to room temperature, then chill it in the fridge for 30 minutes. Cold liquid freezes more evenly.
- Pour it into a shallow metal pan, such as a 9 x 13 inch (23 x 33 cm) baking dish. Metal conducts cold faster than glass, and a shallow layer freezes more quickly.
- Freeze for about 45 minutes, until ice crystals form around the edges.
- Scrape the frozen edges toward the center with a fork, breaking up any clumps. Return to the freezer.
- Repeat every 30 minutes for about 3 to 4 hours, until the whole pan is made of fluffy, dry-looking crystals.
- Whip the cream with the sugar to soft peaks just before serving.
The Scraping Method: Getting the Texture Right
The scraping is what turns frozen coffee into granita. Skip it and you get a solid coffee ice block. Here is what matters most:
- Scrape regularly. Every 30 minutes is a good rhythm. If you forget for a few hours, let the pan sit at room temperature for 10 minutes, then scrape hard with a fork to rescue it.
- Use a fork, not a spoon. The tines break ice into flakes; a spoon tends to mash it.
- Mind the sugar. Sugar lowers the freezing point. Too little and the granita turns icy and hard; too much and it stays slushy. About 1/3 cup per 2 cups of coffee is a good middle ground.
- Do a final fluff. Right before serving, rake the whole pan once more for a light, airy texture.
Sicilian granita is often finer and creamier than the flaky home version, because shops use machines that stir constantly. For a smoother texture at home, scrape more often (every 20 minutes) or briefly pulse the finished granita in a food processor.
How to Serve Coffee Granita with Whipped Cream and Brioche
The classic Sicilian combination is granita topped with whipped cream (panna), eaten alongside a brioche with a little knob on top, known locally as the tuppo. Many people tear off the top, use it to scoop granita, then dip the rest of the bun into the melting coffee.
- Chill your glasses or cups in the freezer for 10 minutes.
- Spoon in a layer of whipped cream, then a generous scoop of granita, then more cream on top.
- Serve immediately with a warm brioche on the side and a spoon.
It makes a fantastic summer breakfast, an afternoon pick-me-up or a light dessert after a heavy meal.
Variations and Tips
| Variation | What to change | Flavor result |
|---|---|---|
| Mocha granita | Whisk 2 tbsp (10 g) cocoa powder into the hot coffee | Chocolatey, rounder |
| Cinnamon granita | Steep a cinnamon stick in the hot coffee for 10 minutes | Warm and spiced |
| Citrus granita | Add strips of orange or lemon zest while the coffee cools | Bright, aromatic |
| Almond granita topping | Fold 1/4 tsp almond extract into the whipped cream | Very Sicilian, nutty |
| Decaf granita | Use a decaf espresso brew | Same texture, evening friendly |
- Choose a bold roast. Dark and espresso roasts keep their character through freezing. Light roasts can taste thin once frozen.
- Make it ahead. Granita keeps for up to a week in a covered container. Rake it with a fork before serving.
- Taste before freezing. The mixture should taste a little sweeter and stronger than you would like a hot coffee to be.
Coffee Granita FAQ
What is the difference between granita and sorbet?
Sorbet is churned while it freezes, which makes it smooth and scoopable. Granita is scraped by hand or stirred slowly, which leaves distinct ice crystals. Granita usually also contains less sugar, so it tastes lighter.
How long does coffee granita take to freeze?
Plan on about 3 to 4 hours in a shallow metal pan, scraping every 30 minutes. A deeper or glass dish can take longer. You can also freeze it overnight and rescue it by softening and scraping before serving.
Can I make coffee granita with instant coffee?
Yes. Dissolve instant coffee in hot water at about double your usual strength, then follow the same steps. It is a handy shortcut if you do not own an espresso machine.
Is coffee granita eaten for breakfast in Sicily?
Yes, especially in summer. Granita with brioche is a popular Sicilian breakfast, and coffee granita with whipped cream is one of the favorite combinations.
How much caffeine is in coffee granita?
It depends on your brew. Each serving contains roughly the caffeine of half a cup of strong coffee or a single espresso shot. Most healthy adults can have up to 400 mg of caffeine a day according to the FDA; if you are pregnant, have a medical condition or take medication, ask your doctor.
